Bootleg Chocolate Valentine's Day Chocolate Torte

Here at Bootleg Chocolates, we are founded by a Mother - Daughter team, run by our beloved Capt Amanda here in Venice, California. Capt Amanda's Mother is a master chocolatier who's family roots strech back to the 1600's in the Carribean. She works hand in hand with Amanda to craft delicious chocolates that you all know and love.

Capt Amanda's Mother in honor of Valentine's Day has spent hours in her wonderous kitchen in the Carribean, crafting the perfect chocolate treat to share with all our chocolate loving fans. Her V-Day chocolate treat is a divine Chocolate Torte, for your taste buds delight.

6 eggs  separated
8 ozs. (1cup) butter
8 ozs. (1cup) sugar
9 ozs. dark chocolate
1 teaspoon vanilla bean paste or pure vanilla extract
8 ozs. dark chocolate
6 ozs. heavy whipping cream
1 tbsp rum (optional)
Separate eggs into separate bowls.
Melt butter and chocolate in double boiler over simmering water
until melted then remove from heat.
Mix egg yolks and 1/2 cup sugar in a bowl using electric mixer until
it thickens and turns lemon colored.
Beat it vanilla and chocolate mixture
In separate bowl, with electric mixer whisk the egg whites until soft
peaks form. Add 1/2 cup sugar gradually until stiff peaks form.

Fold a 1/4 of the beaten whites into the egg yolk mixture to lighten batter.
Then fold in remaining egg whites, do not over mix.

Pour into buttered springform pan 9 x 3 inches or heart shaped pan,
10 inches at widest part, lined with parchment paper.
Bake at 350 for 50 to 60 minuted or until toothpick inserted in middle
comes out with moist crumbs.

Cake will have a hard cracked surface with lots of crumbs and will
collapse when removed from oven.
Cool on wire rack.
Serve with whipped cream or cover with ganache.

We here at Bootleg Chocolates get asked why choose Chocolate for Valentine's Day? Well in the words of our founder Capt' Amanda -

"Chocolate has always been promoted as an "aphrodisiac"....that silky, smooth, sweet taste that satisfies our taste buds and feeling of well being.
